This is a new family favourite, bringing us the feeling of sunshine treats in the middle of winter. A great sweet snack for mid afternoon, after
school or after workout. Full of good fats and super fruits &
flavors !
½ cup / 70gr raw pine nuts
½ cup / 75gr dried pineapple (unsweetened)
½ cup / 43 gr unsweetened shredded coconut
1 TBL/ 1 soupspoon melted coconut oil (or as
needed)
¼ cup / 28gr Goji berries
Pulse the pine nuts into flour in your food
precessor/Thermomix. Then add the rest of the ingrédients and process until they start to stick
together. If it is too dry, add a bit
more coconut oil. Adjust mixture
according to taste. Roll into balls and let sit in refridgerator for a few
hours. Eat. J
